4 cups flour 1 Teaspoon salt 3 Tbsp. (tablespoons) sugar 1 cup butter Pinch of Mace
Mix the first 4 ingredients as for pie crust.
1 Cup cold milk 4 Egg yolks (beaten)
Mix these 2 ingredients together
1/2 Cup warm water 1 Teaspoon sugar 1 Tbsp. (tablespoon) yeast
Mix all ingredients together refrigerate the dough overnight
Cut into 4 strips. Cut each strip into 16 pieces. Make balls. Let Raise. Press centers. Fill, Let raise a little and bake at 350 degrees for 18 minutes (light golden brown). Makes about 5 1/2 dozen Kolaches! 64 pieces.
PASTRY KOLACE RECEIPE (Millie’s Butterhorns)
Step 1: Mix together and set to raise 1 pkg. Yeast ½ cup Sugar 1/3 - ½ cup lukewarm water Step 2: Mix in bowl like for pie crust, the finer the better: 6 c. Flour ½ lb. Lard 1 c. (2 sticks) oleo ½ tsp. Salt
Step 3: Mix together in order: 6 Egg Yolks 2 Tbl. Sugar 1 c. real Cream or Sour Cream Raised yeast Step 4 Add to flour mixture. Mix together. Dough should come away from the bowl. Divide dough into six portions. In a small bowl beat two egg whites until frothy. Put coconut in a small bowl. Take one portion of dough and roll out into a 14” circle. Dab beaten egg whites in the center. Cut like pizza into 10 triangles. Dab each corner of each triangle with egg whites. Place about 1 tsp. of filling of your choice about ½ “ from the outer edge of each triangle. Fold in corners and roll towards the center. Dab into beaten egg whites and then into coconut. Set on greased pan coconut side up. Using scissors cut a small slit in the top.
The slit prevents the filling from coming out the ends. You can vary the direction and number of slits to help determine filling type after baking. Bake at 350 degrees for about 25 minutes or until golden brown, 12 min. on bottom rack and 12 min. on top rack.
